It gives you instructions on how simple it is for you to check your pH levels in order to monitor your progress after changing your diet.
Blood pH is VERY telling of body health and should be in a very narrow pH range Some notable notes that from the book include:
Chronic over acidity corrodes body tissue and IDEAL blood pH is 7.365
Harmful pleomorphic organisms do not and cannot evolve in healthy (alkaline) surroundings.
Eating the right kind of food is the single most important thing you can do for your health.
Vegetables are alkalizing (good). Raw foods are more alkalizing (great). Cooked food is more acidifying (bad).
To maintain a balanced pH in your blood and tissues, your diet should be 70% to 80% basic foods -- that is no more than 20-30% acidifying (and at least half of that 70-80% should be raw).
Vegetables should be the focus of your diet making the majority of them green. They contain Chlorophyll.
Chlorophyll helps the blood cells deliver oxygen throughout the body. It also reduces the binding of carcinogens to DNA in the liver and other organs.
Heat (over 118 degrees) destroys enzymes, which is why you want to get a lot of your food uncooked.
A Swedish Study found a number of dietary factors to be associated with PANCREATIC CANCER, including HIGH CONSUMPTION of FRIED and GRILLED MEAT as well as MARGARINE on WHITE BREAD.
Protein digestion requires a highly acidic environment (stomach) while starches and vegetables require a mildly alkaline environment (mouth and small intestine).
Types of Foods Dr. Young claims are good for you with suggested recipes in the book:
GRASSES: DOUBLE the benefits of vegetables. They are nutrient dense. Examples are wheat grass, barley grass, oat grass, dog grass, kamut grass, lemongrass, and shave grass.
SEEDS: (raw) flax, sesame, sunflower, alfalfa, and pumpkin
NUTS: (raw) almonds, hazelnuts, pine nuts, brazil, macadamias, pecans, and walnuts
GRAINS: buckwheat, spelt, millet, kamut, quinoa, brown basmati rice, soba noodles, whole wheat, unbleached white, rye
BEANS: soybeans adzuki, lentils, mung, black, garbanzo, pinto, kidney, and hummus
HEALTHY OILS: Virgin cold pressed olive oil, grape seed, sesame, flax, sunflower, safflower
MILK: Almond, Soy, or Rice Milk
WATER: Distilled or purified
PRODUCE: Garlic, ginger, onions, chili peppers, lemons, limes, peppers, dark greens, colored vegetables, basil, parsley, etc.
